      Wash your sunflower seeds in a large bowl of water to get rid of hidden particles. Lay them out to dry in the sun, or air dry the seeds in your kitchen.

      Soak the sunflower seeds in a bowl of salted water for 30 to 60 minutes. If you want saltier seeds, soak them overnight. Skip this step if you don't want salted seeds.

      Pour olive oil over the sunflower seeds. Stir until the seeds are completely covered. The olive oil keeps the seeds from drying out during baking, and gives them a nice flavor.

      Sprinkle chopped herbs and spices of your choosing on the seeds. Stir the seeds until their covered with the herbs and spices. For stronger flavor, let the seeds marinade for 45 to 60 minutes.

      Pour the seasoned sunflower seeds on a baking tray. Place the tray in an oven preheated to 350 degrees. Bake for 30 to 40 minutes. Stir the seeds occasionally to prevent burning.
