How to Farm Ginger Root

Growing ginger root is as easy as setting the roots down on the dirt (instead of in it) and they'll take care of the rest. The tall, slender stems and leaves closely resemble bamboo and, when allowed to reach maturity at over 200 days, the ginger plant may display yellow flowers along the base of its stem. Before you grow large quantities of ginger root in your farm or garden, make sure you have a potential market or use for it. It will keep for up to a year in the freezer, but shipped fresh it may spoil in a matter of weeks. Does this Spark an idea?

      Start your crop from smooth, shiny, firm ginger roots that have eyes like those of a potato on them. Break or cut the roots apart into as many pieces as you can, provided that each piece has an eye or growing tip on it. Let the raw edges from the cuts or breaks dry completely--this may take a day or longer--before planting the ginger.

      Place each piece of ginger in your garden or farm 6 inches apart, with at least 12 inches between each planted row. There is no need to cover the roots with soil.

      Cover the rows with floating row covers or stick an 18-inch stake 6 inches into the soil every couple of feet. Drape plastic sheeting over these stakes so that they form a sort of open tunnel over the ginger roots.

      Wait until most of the ginger roots have sprouted before removing the floating row covers or sheeting.

      Water your ginger plants regularly. They take about 260 days to reach their fullest flavor, but once you see the thick rhizomes growing beneath the surface of the soil you can reach down and break or cut off a piece of root for your own use at any time.

      Harvest the ginger root about 260 days after it sprouted. Either dig the entire plant up and cut away all usable root, discarding the rest, or reach down and snap off most of the surface roots while leaving the rest in the soil. It might come back of its own accord next year.

      Ship or sell fresh ginger root immediately. You can store quantities of it in the freezer, if necessary, or dry it for long term storage if necessary.
