      Prepare the turkey. Apply any spices or rubs. Stuff the turkey, if desired.

      Turn on the Nesco roaster. Set it to 400 degrees and place the turkey on the roasting rack.

      Roast the turkey. Cook it for 15 to 20 minutes per pound, plus 30 minutes if it is stuffed.

      Reduce the heat. After one hour of roasting, turn the heat down to 350 degrees. Baste frequently to prevent the turkey from drying.

      Brown the turkey. About an hour before the turkey is done, increase the heat to 400 degrees to brown the outside. If the turkey is very large, this may not work--you might need to consider moving it to the conventional oven for the last 45 minutes of its cooking time to achieve that golden brown color you're looking for.

      Keep the turkey warm. If you aren't ready to serve the turkey, turn the heat down to 200 degrees and cover it with tin foil.

Tips & Warnings

  • If the turkey is already browning nicely, you can leave the heat at 350 degrees for the entire cooking time.
