Nothing takes the place of good old fashion stew beef, and Mama made the very best. Here's how she did it.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 - 3 pound beef roast or beef stew meat
  • several white or red potatoes
  • 1 large onion
  • flour
  • salt and pepper
  1. Step 1

Cut beef roast into cubes, roughly about 1 1/4 to 2 inches. Salt and pepper to taste. Shake on a bit of garlic powder. Roll beef pieces in flour seasoned with a bit of salt and black pepper.

  2. Step 2

Put just enough vegetable oil in a large pot to prevent meat from sticking. Heat oil and add floured pieces of beef. Brown meat, turning to cook each side.

  3. Step 3

When beef is browned, add cut up onion and water to cover beef about an inch or two. Cover pot and simmer until beef is tender, stirring occasionally and check water level. Add water as needed. The longer it simmers, the better it tastes.

  4. Step 4

When beef begins to tender, add cut up potatoes. You might like to add carrots also, or even peas, for a variation. When potatoes are done, you're ready to serve. This dish is great served over dry white rice. This is one recipe that is even better when served the next day.

on 5/12/2009 Yessir. The next day it's always better. I love stew all year. I don't care how hot summer gets. And I barbecue in the winter. I eat what I want. I don't care what my neighbors think.
