This is the absolute easiest thing to make out of rhubarb. It is ready to enjoy in 7 minutes. Now, that's rhubarb...rapidly! Try this warm on ice cream, or spread on bread, muffins, crepes, etc. If you've never tried rhubarb, this rhubarb sauce recipe is so fast and easy, you can't go wrong. If you already love rhubarb sauce , you will find that microwaving the sauce is much easier than other cooking methods. Does this Spark an idea?

Things You'll Need

  • 2 cups rhubarb stems, chopped into 1 inch pieces
  • 1/8 teaspoon salt
  • ½ cup white sugar, OR ½ cup packed brown sugar
  • Red food color (optional)
  • Dash of cinnamon (optional)
  • Glass baking dish
  • Microwave oven

Instructions

      Put the chopped rhubarb and salt together in a glass baking dish. Cover and microwave for 2 minutes. Take out and stir.

      Add the brown OR white sugar. Stir. Cover again. Microwave for two more minutes and then take out. Stir it once more.

      Cover the dish. Microwave for 2 more minutes to finish your lovely rhubarb sauce. Add a dash of cinnamon and stir, if desired. If this dessert sauce is too green looking for your liking, add a few drops of red food coloring and stir.

      Serve warm over ice cream, or on muffins, toast, or crepes. Use your imagination. You can also cool it and serve cold. Bee-bop-a-ree-bop!

Tips & Warnings

  • Rhubarb is ripe in April and May. You may be able to get rhubarb all year, if it is grown in a greenhouse.

  • Choose the reddest rhubarb you can find.

  • Ask around to find out where to get garden fresh rhubarb. You may find a neighbor with a backyard rhubarb patch who is willing to share or sell you some.

  • If the green of the leaf is still attached, slice all of it off, as the green leaf part is not good for you! Do not eat it.
