This recipe for low-fat oatmeal breakfast bars creates the prefect healthy snack or on-the-go breakfast. Quick and easy to make, these breakfast bars are moist, filling, and sure to please even the pickiest eaters.

Instructions

Things You'll Need:

  • 3 cups old-fashioned rolled oats
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup skim milk
  • 1 cup unsweetened applesauce
  • 2 eggs or 1/2 cup liquid egg substitute
  • 2 tablespoons brown sugar
  • 1/4 cup canola oil
  • 2 tablespoons honey
  • 1 and 1/2 tablespoons vanilla extract
  • 1 cup dried cranberries
  • Extra brown sugar and cinnamon for sprinkling on top
  1. Step 1

    Preheat your oven to 350° F and lightly coat an 8-inch square baking dish with cooking spray.

  2. Step 2
     

    In a large bowl, combine oats, baking soda, cinnamon, nutmeg, and salt with a spoon or wire whisk.

  3. Step 3
     

    In another bowl, mix the following ingredients with a wire whisk until well blended: milk, applesauce, eggs, brown sugar, canola oil, honey, and vanilla extract.

  4. Step 4

    Add the liquid ingredients to the large bowl with the dry ingredients. Stir with a large spoon until well combined. Then fold in the dried cranberries.

  5. Step 5
     

    Pour the batter into your baking dish and lightly sprinkle the top with brown sugar and cinnamon. Bake for 30-35 minutes.

  6. Step 6

    Allow oatmeal breakfast bars to completely cool before cutting into nine squares.

Tips & Warnings
  • Try this recipe with dried blueberries or a combination of dried blueberries and cranberries for a new twist.
  • When adding the honey to the wet ingredients, spray your measuring spoon with cooking spray so the honey comes off the spoon easier.
  • These low-fat oatmeal breakfast bars should keep up to a week when covered with plastic wrap or aluminum foil.
  • Make a double batch and freeze some of the oatmeal bars for later in the month.
