How to make Chicken with 40 cloves of garlic

These are two of my favorite things to put together roast Chicken and garlic. Roast chicken is great on its own but with the addition of garlic slow roasted to perfume everything it comes into contact with.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups chopped onions
  • 2 cups chopped celery
  • 1 cup chopped carrots
  • 1 tsp lemon zest
  • 1 medium lemon thinly sliced
  • 1 3-1/2 to 4 lb chicken
  • 40 plump cloves of garlic peeled
  • 3 Tbsp olive oil
  • 1/4 cup dry wine or stock
  • 1/3 cup mixed herbs thyme,rosemary,parsley,tarragon and chives.
  1. Step 1

    Preheat the oven to 375 degrees. Combine vegetables together reserving 1/4 cup, spread the remainder of the mix in 5 1/2 quart Dutch oven. Scatter zest and 35 cloves in the dutch oven. Season the interior and exterior of the chicken with salt and pepper. Stuff the remaining vegetables,garlic and lemon inside the cavity of the chicken. Add the olive oil and the wine. Place 2 Tbsp of the herbs in side the chicken and spread the rest around the outside of the chicken.

  2. Step 2

    Insert a instant read thermometer in the thigh careful to not touch the bone. Cover the pot with foil, then with the lid. Roast the chicken at 375 for 1 1/4 hours. Remove foil and top and roast for a additional 15 minutes remove the chicken when it reaches 155-160 degrees.

  3. Step 3

    Remove from the oven and tent with foil for ten minutes. Remove vegetables and herbs from the cavity, carve and serve chicken with pan juices.
