How to make High-Energy Trail Bars

Who doesn't need more energy these day's? These little "Power Packed Energy Bars" will be a quick and easy snack for the family.

They also pack well for those hiking trips, and are a heathier snack for everyone.

Difficulty: Easy
Instructions

Things You'll Need:

  • 6 dried black figs
  • 1/2 cup pitted dates
  • 1/2 cup golden seedless raisins
  • 1/4 cup dried apples
  • 1/4 cup dry-roasted cashews
  • 1 1/4 cups walnuts
  • 1/2 tsp lemon juice
  • 1 Tbls light or dark rum
  • 1/2 cup flaked coconut
  1. Step 1

    Always use the freshest ingredients you can find. You can either use a Food Processor or a Food Chopper. Grind walnuts, cashews, figs, dates, raisins, and apples. Blend in rum ( for adults only) and lemon.

  2. Step 2

    Using about a Tbls. at a time, shape the mixture into small bars, approximetely 3/4" x 2". Roll the bars in coconut and set them out uncovered to air dry for one or two days.

  3. Step 3

    Wrap each bar in aluminum foil or plastic wrap to take on the trail or store them in an airtight container in the refrigerator. Makes about 2 dozen energy bars. You may consider doubling the recipe because there gone before you know it.

  4. Step 4

    Another good thing about this recipe is there is no baking involved so you can make them any time of the year. Another idea is, if you own a day care, these would make a much healthier snack for the kids. * Of course for the kids you would leave out the tbls of rum.

on 10/11/2009 I like the idea of being able to make this my self. I'm a little picky and hate it when they ruin a good bar with raisins. (yuk) I can just them out now.
