Things You'll Need:
- (Cold Noodles)
- Your choice, 8 ounces of the following: buckwheat noodles/Japanese soba, rice noodles/vermicelli/glass noodles, angel hair pasta noodles, ramen noodles
- 4 ounces beef rump roast
- 1 cup yellow onion, thinly sliced
- 1/4 cup sliced beef
- 1 cup chopped red bell peppers
- 1/4 teaspoon baking soda
- 1 cup carrots, thinly sliced
- 1/2 teaspoon white toasted sesame seeds
- 1/2 cup chopped green onions
- 1/4 cup shredded cucumber
- 1 teaspoon hot pepper flakes
- (Salad Dressing)
- 1/4 cup vegetable broth
- 1 tablespoon pure honey
- 2 tablespoons tahini
- 1 tablespoon rice wine vinegar
- 1 tablespoon sesame oil
- 2 tablespoons chili oil
- 1-1/2 teaspoons minced garlic

Step 1
Cook noodles of your choice according to package directions. Add 2-3 drops olive oil to prevent sticking, if needed. Drain when done cooking. Rinse noodles in a colander under cold running water to stop immediately the cooking process. Place noodles in a lid container, cover, and chill until serving time.

Meanwhile, make the stir fry.
Cut beef into thin strips. Heat a skillet over high heat with 1 tablespoon cooking oil. When the oil is hot but not smoking, saute the onion with hot pepper flakes, 1 minute. Add in the beef and the red bell pepper. Sprinkle baking soda. Cook until beef is brown and no longer pink inside. -
Step 3
In a bowl, mix together the garlic, honey, rice wine vinegar, tahini, chili oil, sesame oil, and vegetable broth.

Bring out the chilled noodles and transfer onto a plate. Pour dressing over the chilled noodles and toss to coat.

Firstly, spoon the cooked beef mixture on top the noodles. Next the shredded cucumber, carrots, chopped green onions, then the sesame seeds.

Enjoy! Makes one large serving.
* Variations: If you want a salty version, omit hot pepper flakes during beef cooking, and substitute 3 tablespoons light soy sauce for the chili oil in the dressing. You can use other meats, such as chicken (dark meat portions, e.g. drumstick), pork picnic roast, calamari and shrimp with the same amount used for beef.
