Make Easy Enchiladas for Cinco De Mayo

We have July 4th as our Independence Day. Mexico has May the 5th The Mexicans fought the French for their independence valiantly at the Battle of Puebla. Their success influenced the United States more than people realize. The French was sending soldiers to help the Confederates in our Civil War. With their loss of men in Mexico they could no longer send men to the states, which helped the North in their victory.

It is always fun to learn of other cultures. Cinco De Mayo is an excellent opportunity to discover Mexico's customs and delicious food. Following is an easy and tasty treat. I know you will enjoy them, I sure do.

Instructions

Things You'll Need:

  • 1 pkg of Enchilada sauce mix (McCormick)
  • 1 1/2 cups water
  • 1 8 oz. can tomato sauce
  • Medium onion, chopped
  • 1 lb. of ground turkey meat (can use beef)
  • 8 corn tortillas (or flour)
  • 1 cup of shredded Cheddar cheese.
  • Be ready for some fun
  1. Step 1

    STIR together, Sauce mix, water and tomato sauce in a medium saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes or until thickened. Stirring it occasionally.

  2. Step 2

    BROWN meat in large skillet on medium heat add onion and let cook with the meat. Drain fat. Stir in ½ cup of sauce.

  3. Step 3

    Heat tortillas according to package directions, dip into sauce to coat. Spoon about ¼ cup meat filling into each tortilla. Roll tortillas tightly; place seam-side down in greased 11 x 7 in. baking dish. Pour remaining sauce over enchiladas. Top with cheese.

  4. Step 4

    BAKE in 350 F. oven 15 minutes or until sauce is bubbly and cheese is melted.

Tips & Warnings
  • If you like the sauce with extra zing (hotter), add some Tabasco sauce.
  • Have a complete Fiesta (party) and dress up the place with colored decorations with a Mexican theme.
  • Rent a documentary on Cinco De Mayo and watch, or a video on the Mexican culture.
  • Learn some simple sentences in Spanish.
  • Enjoy the experience and be sure and get the kids involved
