Things You'll Need:
- 1 pkg of Enchilada sauce mix (McCormick)
- 1 1/2 cups water
- 1 8 oz. can tomato sauce
- Medium onion, chopped
- 1 lb. of ground turkey meat (can use beef)
- 8 corn tortillas (or flour)
- 1 cup of shredded Cheddar cheese.
- Be ready for some fun

Step 1
STIR together, Sauce mix, water and tomato sauce in a medium saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes or until thickened. Stirring it occasionally.

Step 2
BROWN meat in large skillet on medium heat add onion and let cook with the meat. Drain fat. Stir in ½ cup of sauce.

Step 3
Heat tortillas according to package directions, dip into sauce to coat. Spoon about ¼ cup meat filling into each tortilla. Roll tortillas tightly; place seam-side down in greased 11 x 7 in. baking dish. Pour remaining sauce over enchiladas. Top with cheese.

Step 4
BAKE in 350 F. oven 15 minutes or until sauce is bubbly and cheese is melted.
