How to Make 7 Point Chicken with Broccoli and Garlic Sauce for Weight Watchers

When prepared as directed, this delicious recipe for chicken with broccoli and garlic sauce tastes great while using only 7 Weight Watcher points per serving. For a vegetarian version of this low point dinner, try substituting 3 ounces of firm tofu (12 oz for 4 servings).

Instructions

Things You'll Need:

  • 1 tsp olive oil
  • 1/2 tsp minced garlic
  • 4 oz boneless, skinless chicken breast in 1 inch cubes
  • Pinch of dried thyme
  • Salt & pepper
  • 1 cup frozen broccoli florets
  • 1/2 cup chicken broth
  • 1 cup brown rice
  1. Step 1

    Pre-heat oil in a medium skillet over medium heat.

  2. Step 2

    When the oil is ready, add the minced garlic and sauté until lightly brown (about one minute).

  3. Step 3

    Prepare the chicken by seasoning the meat with the thyme, salt & pepper (to taste). Place the chicken in the skillet and cook until browned, stirring frequently (3-4 minutes)

  4. Step 4

    Add the broccoli to the mixture and continue stirring for another minute.

  5. Step 5

    Finally, add the broth to the mixture, cover and let the mixture simmer for 5 minutes.

  6. Step 6

    Serve over top of the brown rice.

    This recipe is for 1 serving of the chicken with broccoli and garlic sauce. To make 4 servings simply increase the quantities as follows:

    4 tsp olive oil
    2 tsp minced garlic
    1 lb boneless, skinless chicken breast in 1 inch cubes
    1 tsp dried thyme
    Salt & pepper
    4 cup frozen broccoli florets
    2 cup chicken broth
    4 cup brown rice

Tips & Warnings
  • For a vegetarian version of this recipe substitute 3 oz of firm tofu per serving for the chicken
