Things You'll Need:
- 5lbs small potatoes
- 1lb turkey bacon or lean bacon
- 1/4 cup barbecue sauce
- 2 tablespoons Dijon mustard
- 1 bunch shallots, chopped
- parsley for garnish
- sea salt
- pepper

Step 1
Lightly scrub potatoes and place in a pot with cold water. Bring to a boil and cook for 25-35 minutes or until potatoes are tender.

Drain and cool slightly until potatoes are able to be handled. Then, cut potatoes into quarters and place in a large bowl. Potatoes should still warm on the inside to allow for better absorption of dressing.

In a small bowl, combine mayonnaise, barbecue sauce, mustard, salt and pepper. Add to bowl with potatoes and gently combine until potatoes are well coated.

Refrigerate for 3 hours. Potatoes will absorb much of the mayonnaise dressing.

Meanwhile, chop bacon into small pieces and fry until crisp and fully cooked. Remove from pan and drain any grease remaining. Set aside.

Chop scallions. Add to potato mixture along with the bacon. Garnish with parsley and serve.
