Things You'll Need:
- (MAIN)
- 1 pound medium size fresh tiger prawns
- 1 cup of snow peas, fresh or frozen
- 1 tablespoon rice wine
- 1 tablespoon cornflour; cornstarch or baking soda
- 1 red bell pepper
- 1 green bell pepper
- Salt and black pepper, to taste
- (TOMATO SAUCE)
- 1/2 cup ketchup
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 tablespoon apple cider or white vinegar
- tablespoon vegetable broth
- 1 teaspoon cornflour mixture - - thickener
- 2 tablespoons vegetable oil, for stir-frying

Step 1
Raw fresh water tiger prawnsWash prawns and dry on paper towels. Peel shells; you may leave the tail shells intact if desired. Devein.
In a large bowl, whisk together the rice wine, cornflour; cornstarch (or baking soda), a pinch of salt and black pepper. Place the prawns in and toss evenly with the mixture. Cover with plastic food wrap and place in the fridge to marinate, 30 minutes. -
Step 2
Preparing the vegetables(1)While the prawns are marinating, rinse peas under running water in a colander (if using fresh). Blanch the snow peas in boiling water to soften, 1 minute. Drain and reserve.
(2)Wash the red and green bell pepper, discard seeds then dice them up. Set aside. -
Step 3
Now make the tomato sauce:
Mix in a bowl the ketchup, sugar, salt, apple cider or white vinegar, vegetable oil. Stirring. Lastly, add in the cornstarch, stir until completely dissolved. -
Step 4
Cooking the prawnsBring the marinated prawns from the fridge. Heat oil in a skillet or wok, and saute 2 minutes. Add in the snow peas and bell peppers (items #1 and #2 in Step 2). Stir-fry until the vegetables are cooked through and the prawns turn red in color.

Step 5
Tomato sauce for the prawnsAt the same time stir-frying the prawns and vegetables, pour the tomato sauce into a saucepan. Heat over medium heat until warm.
