Fried chicken is usually prepared with the skin on. A lot of fat is stored in chicken skin and most of it is saturated fat. Saturated fat can raise LDL (the bad) cholesterol levels in our blood. To make that fat even worse, the chicken is then deep-fried in grease after breading. In a nutshell, there is no form of fried chicken that is healthy for us.

However, there is a healthier way to have the taste of fried chicken. This fried chicken recipe is cooked in the oven instead. Oven fried version removes fat while "baking/roasting", instead of immersing the meat into more oil during deep-frying.

You can enjoy more often the oven-fried version without guilt.

Instructions

Things You'll Need:

  • Your choice of 12 pieces of fresh chicken
  • 1 cup fine bread crumbs
  • 1-1/2 teaspoon salt
  • 3 teaspoons paprika
  • 1 teaspoon white pepper
  • 2 whole eggs or 1/4 cup cooking oil (for brushing)
  1. Step 1

    Wash and clean the chicken pieces. Dry with paper towels and remove skin. Trim any fat you see, particularly the yellow colored. Set aside.

    Preheat oven to 400 degrees F.

  2. Step 2

    In a large bowl, combine bread crumbs, salt, paprika, and white pepper. Mix well.

    Crack and whisk two eggs in a large bowl. Or pour 1/4 cup of cooking oil in a large bowl, if using.

    ** Omit paprika pepper if you like a non-spicy version.

  3. Step 3

    Brush the chicken with egg solution (recommended) or cooking oil. Next, roll each piece in seasoning mixture, coat well and shake off excess.

    Bake chicken in non-stick baking pan, or with some cooking oil if using regular tray. Cook for 1 hour until golden and crispy, or when the juices run clear. There is no need to turn the chicken pieces while baking.

    Serve hot.

Tips & Warnings
  • Oven fried chicken is lower in fat and calories.
