Things You'll Need:
- 4 cups mashed potatoes
- 1/2 cup sliced green onion
- 3/4 cup shredded cheddar cheese
- 1/2 cup crumbled bacon
- 3/4 cup sour cream
- few dashes of garlic powder
- large microwave safe bowl
-
Step 1
Prepare mashed potatoes, either from scratch from a favorite recipe, or out of a box of instant. Instant mashed potatoes, or leftovers, do very well for this recipe.
-
Step 2
Add mashed potatoes to a microwave safe bowl big enough to accommodate all ingredients. Stir well, and warm if necessary, so potatoes are a smooth consistency.
-
Step 3
Slice green onions into pieces about a quarter inch thick. If you really like green onions, add more.
-
Step 4
Shred cheddar cheese, or use packaged shredded cheese. A good sharp cheddar is a fantastic addition to this recipe, but any kind will do just fine.
-
Step 5
Add all ingredients to mashed potatoes, leaving a small amount of shredded cheddar cheese, bacon, and green onions out to garnish when done. Stir well, until all ingredients are incorporated well into the loaded mashed potatoes.
-
Step 6
Cook in microwave for 30 seconds, stir, and cook again for another 30 seconds or until cheese is melted and loaded mashed potatoes are hot.
-
Step 7
Garnish with the remaining cheese, bacon, and sliced onions on top of loaded mashed potatoes. Enjoy!
