How to cook Thai sticky rice in a fuzzy logic rice cooker

Thai sticky rice is typically steamed in order to get its firm but sticky consistency. However, a fuzzy logic cooker is more convenient than steaming it the conventional way. Unfortunately, a fuzzy logic cooker usually boils rice, which will make the texture more mushy. Try using this workaround to get something closer to the appropriate steamed texture with the convenience of a rice cooker.

Instructions

Things You'll Need:

  • fuzzy logic rice cooker
  • metal steamer basket
  • Thai sticky rice
  • water
  1. Step 1

    Rinse raw sticky rice in water three times (or until water runs clear) and soak overnight. Drain water.

  2. Step 2

    Place steamer basket in rice cooker pot and note where bottom of steamer basket rests. Remove.

  3. Step 3

    Fill rice cooker pot with water until just below where the steamer basket bottom would be.

  4. Step 4

    Open steamer basket and place in rice cooker pot. Fill with clean rice, leaving a little bit of space at top for rice to expand (maybe about 1/2 an inch).

  5. Step 5

    Turn rice cooker on, using "sweet" or "sticky" rice setting. It should take about an hour to cook, depending on how much rice you use.

Tips & Warnings
  • Check rice after 45 mins. to see if it's reached the desired consistency.
  • Remove rice from basket immediately after it's ready, as the bottom will continue to cook and get more gooey (and less desirable).
  • If you like, you can take the extra step to add a layer of cheesecloth between the rice and the steamer basket.
