Top round steak is a more tender cut of beef than most round steaks, but it's still a tougher meat than other steaks. Tenderizing top round steak goes a long way toward making this meat easier to cut and chew. There are different ways to cook this steak, one being to cook it in a skillet with moist heat.   • Meat pounder
  • Top round steak
  • 1 cup flour
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 2 onions
  • 1 bell pepper
  • 2 garlic cloves
  • 1 can mushrooms
  • 3/4 cup vegetable oil
  • 2 cups water
  • 1 tsp. Worcestershire sauce

      Tenderize the round steak by pounding the entire surface with a meat hammer. This tool has two sides--one with larger points for meats, like pork or beef, and one with smaller points, for veal and poultry. Cut the top round steak into either thin strips or small chunks.

      Combine the flour, black pepper and salt in a bowl and mix together. Drop the cut-up pieces of round steak into the seasoned flour and coat each side.

      Cut the onions, garlic and bell pepper into small pieces. Open the can of mushrooms and drain the water out.

      Put 1/4 cup vegetable oil in a heavy skillet. Add the onions, garlic, bell pepper and mushrooms to the skillet and cook until softened at medium heat. Take the cooked vegetables out of the skillet and put on a plate until later.

      Pour the other 1/2 cup vegetable oil into the skillet and let it heat up. Take the flour-coated steaks and place them in the hot oil. Cook until each side has lightly browned.

      Mix the water and Worcestershire sauce in a bowl and then add the cooked onion mixture. Stir to mix together and then pour into the pan of browned top round steak.

      Cover the skillet tightly with a lid and simmer for 1 1/2 hours. The flour and water will slowly cook together and form the gravy. Stir occasionally so none of the food sticks to the bottom of the skillet. Pour over rice or noodles or enjoy it without either.

Tips & Warnings

  • Use the already prepared gravy found in jars, cans or packs of dry gravy mix instead of making your own.
