Today we are going to make Mexican Rice. This is a nice addition to any meal rather it be a Mexican dish or not.

This recipe is not spicy like one would think when hearing it is a Mexican dish but could easily be spiced up with chili powder if desired.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 teaspoon of salt
  • 1 clove garlic, minced
  • 3 tablespoons cooking oil
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1/2 cup tomato puree or can tomato
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  1. Step 1

    We always start out by getting everything ready to go before we start cooking. First thing we are going to do is set out all of the ingredients we are going to need. Then set out all cooking utensils, measuring cups and spoons, bowls and pans. Having everything handy makes preparing your meal easier.

  2. Step 2

    Heat oil in a skillet, add rice and cook until golden. Add onion, bell pepper, and garlic to skillet. Sauté.

  3. Step 3

    Place salt, tomato and broth in blender and blend to a liquid.

  4. Step 4

    Add tomato mixture to rice, cook over low heat until rice is tender and liquid is absorbed, about 20 minutes.
