Things You'll Need

  • Baked pastry shell or graham cracker crust
  • Whipped topping or meringue made from 2 egg whites and 2 tablespoons of sugar
  • 3/4 cup sugar
  • 1/3 cup flour
  • 1/8 teaspoon salt
  • 2 cups scalded milk
  • 2 tablespoons butter
  • 2 eggs, well beaten
  • 1 teaspoon vanilla
  • 3 to 4 ripe bananas

Instructions

      Prebake a frozen or homemade pastry shell in the oven according to your pie recipe directions. You can use a graham cracker crust if you prefer. Let it cool.

      Combine 2 tablespoons butter, 3/4 cup sugar, 1/8 teaspoon salt, 1/3 cup flour and two well-beaten eggs. Add the scalded milk slowly, stirring the mixture constantly.

      Cook the mixture in a double broiler stirring constantly over hot water until thick and smooth. Be patient because this takes at least 20 minutes or more. Add 1 teaspoon of vanilla and stir.

      Thinly slice three to four ripe bananas and add them to the mixture. Pour the mixture into the baked pastry shell.

      Serve with whipped topping or meringue. Refrigerate the pie when completed until ready to serve.

Tips & Warnings

  • To make meringue topping, combine two egg whites and 2 tablespoons sugar. Beat with mixer until the egg whites form stiff peaks. Gently add 1/2 teaspoon vanilla to the egg whites. Cook in the oven at 325 F to brown the meringue.
