There are quite a few ways to prepare cauliflower, but roasting turns it very tender making it melt in your mouth. Roasted cauliflower looks like popcorn, so tricking your kids might be a good way to get them to eat more vegetables.

Things You'll Need

  • A Head of Cauliflower
  • 2 tbsp Olive Oil
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Red Pepper Flakes (optional)
  • Other seasoning (optional)

Instructions

      Preheat the oven to 400 degrees.

      Prepare the cauliflower by removing outer leaves and rinsing it. Then remove the core and cut it up into flowerets.

      In a large mixing bowl, toss the cauliflower, oil, salt, pepper and red pepper flakes (if using). You could also add garlic powder or your favorite seasoning mix. Italian seasoning is always a good choice.

      Spread the mix into a single layer in a large baking dish.

      Roast for 30-35 minutes or until the cauliflower becomes soft and turns golden brown.
