Things You'll Need

  • 6 thinly sliced chicken cutlets
  • 1 egg
  • 2 teaspoons water
  • 3/4 cup seasoned breadcrumbs
  • 6 slices alpine lace Swiss cheese
  • 6 thin slices of deli ham
  • Salt
  • Non-fat cooking spray
  • Toothpicks
  • Low-fat or fat-free chicken gravy
  • Cookie sheet

Instructions

      Preheat the oven to 350.

      Combine the egg, water and a dash of salt in a small bowl. Beat with a fork to make an egg wash. Set aside.

      Place the breadcrumbs in a dish or bowl and set aside.

      Place one slice of the cheese and the ham on each chicken breast. Wrap the chicken completely around them and secure with toothpicks.

      Dip the rolled chicken into the egg wash and roll in the seasoned breadcrumbs.

      Spray a cookie sheet with non-fat cooking spray. Place the chicken on the cookie sheet and lightly spray it with non-fat cooking spray. Bake for approximately 25 minutes.

      Spoon a little chicken gravy on top of the baked cutlets just before serving.
