Things You'll Need:
- 1 cup brown rice
- 2 1/2 cups water
- 1 TBSP Braggs Liquid Aminos or Soy Sauce
- 1/2 - 1 tsp sea salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- pinch of saffron
- 2 cloves garlic, peeled & chopped
- 1/2 cup finely chopped onion
- 1 chopped tomato
- 1 cup frozen peas

Step 1
Brown rice is fiber-richPour 2 1/2 cups of water in a large sauce pan and bring to a boil. Stir in brown rice, Braggs Liquid Aminos or soy sauce, salt, black pepper, cayenne pepper, saffron and chopped garlic. Cover tightly and cook over low heat for 45 minutes until rice is tender and water is absorbed.

Add uncooked veggiesIn a large casserole dish, combine cooked brown rice, chopped tomato, finely chopped onion and frozen peas. Mix well and sprinkle with chili powder/paprika for garnish.

Enjoy Vegetarian Spanish RiceCover tightly and bake in a 350 degree oven for 45 minutes. Remove from oven and allow to cool for a few minutes. Serve Vegetarian Spanish Rice as a main dish with a salad and enjoy. This recipe makes 4 large servings.
