Making caramel candy can be a hard task. Not to mention messy. Using a crock pot will make this rich creamy confection a lot easier. Eat it as is, coat some apples, or dip the pieces in chocolate. The uses are many.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 cup sugar
  • 1/4 cup flour
  • 1 cup brown sugar
  • 1 cup white corn syrup
  • 1 and 1/2 cups half and half
  • 1/2 cup butter, melted
  • 1/4 cup flour
  • 2 teaspoons vanilla extract
  • 1 cup pecans, optional
  • crock pot or slow cooker
  1. Step 1
    Mixing the Caramel

    Mixing the Caramel

Mix the sugar and 1/4 cup flour thoroughly in the crock pot. Add the brown sugar, corn syrup and 1 cup of the half and half. Stir well and cover. Cook on high for 2 to 3 hours. While cooking on high, stir every 30 minutes.

  2. Step 2

Make a smooth paste with the melted butter and 1/4 cup flour. Gradually add 1/2 cup half and half. Stir this mixture into the crock pot mixture. Turn on low and cook for 8 to 10 hours. If it does not thicken, turn on high and cook until it coats a spoon. Add the vanilla and chopped pecans, if using. Again, if you need to raise the temperature to thicken stir every 30 minutes.

  3. Step 3
    Cutting Caramel

    Cutting Caramel

Pour onto buttered cookie sheet, about 1/2 in deep. Cool until completely cold. Cut with knife or kitchen shears in to desired size and wrap each piece in food wrap.

Tips & Warnings
  • Use real butter, do not use margarine.
  • Can use evaporated milk
  • Mixture will be hot when pouring onto cookie sheet.
