Things You'll Need:
- 1/2 large onion
- 2 TBSP oil
- 1 can black beans
- 1 can pinto beans
- 1 can corn
- 3 cans tomato sauce (8 oz.)
- 1 can green chilis
- 2 TBSP chili powder
- 1 TBSP cumin
- 6 white corn tortillas
- 1 16 oz. pkg shredded Mexican cheese blend

Step 1
Saute onion & chilisIn a large stock pot, add chopped onion and oil and saute until onion is translucent. Add green chilis and saute for 2 more minutes.

Step 2
Vegetarian chili ingredientsAdd chili ingredients: spices, black beans, pinto beans, corn and tomato sauce. Simmer for at least 30 minutes. You may prepare chili ahead of time and transfer to a slow cooker, if desired, and assemble the dish later in the day.

Step 3
Now you are readyAssemble the ingredients: cooked vegetarian chili, corn tortillas and Mexican cheese blend.

Step 4
Layer ingredientsIn an oiled 9x13 baking dish, layer ingredients. Place two tortillas on the bottom, cover with 1/3 of the chili and sprinkle with cheese. Repeat layers until ingredients are gone, finishing with cheese for topping.

Step 5
Vegetarian Chili BakeCover with aluminum foil and bake in a 350 degree oven for 30 minutes. Remove the foil and continue baking for 10 minutes, or until cheese is golden brown. Allow to cool for 15 minutes, cut and enjoy your Vegetarian Chili Bake.
