  • 2 heads of garlic
  • 2 bsp. olive oil
  • Salt
  • Black pepper

Instructions

  1. Roasting Garlic

    • 1

      Preheat oven to 325 degrees Fahrenheit . If roasting in a toaster oven, preheat oven to 400 F.

      Cut off 1/4 to 1/2 inch of each garlic cloves. This will make it easier to squeeze out when roasted.

      Peel away the outer layers of the garlic bulb skin and add the garlic to a small roasting pan. Drizzle the garlic with olive oil, using your finger to make sure each garlic head is well coated.

      Cover with aluminum foil and roast until garlic is soft when pressed. Usually this takes approximately 40 minutes to an hour. In the toaster oven, roast for 30 to 35 minutes, checking periodically to ensure that the garlic does not burn.

      Allow the garlic to cool a bit so you can touch it. Use your fingers to pull or squeeze the roasted garlic cloves out of their skins.

      Season with salt and pepper to taste.

Tips & Warnings

  • If you're not going to use the roasted garlic immediately, store it in an airtight container with just enough olive oil to cover the cloves in the refrigerator. Use within three to seven days.

  • If you don't have a roasting pan, you can roast individual heads of garlic wrapped in aluminum foil.
