Low-fat cottage cheese is a popular choice among dieters, as it it filling and offers plenty of protein and calcium. It can be used as a cheese substitute in dishes like lasagna or paired with fruits or vegetables. Does this Spark an idea?

Things You'll Need

  • Large pot
  • Medium saucepan
  • Salt to taste
  • Melted butter (1 tablespoon per quart)
  • 1/2 gallon milk
  • 2 tablespoons white vinegar
  • Food thermometer

Instructions

      Sour the milk by adding the white vinegar to it. Put the soured milk in a suitably sized saucepan. Fill a large pot with hot water. The saucepan must fit in this pot.

      Place the pot with the pan in it on the burner and heat it until you see the curd separating. It's best to use a thermometer, turning the heat off when it reaches 190 degrees. Do not let the milk boil or the cottage cheese will be tough.

      Remove from the heat. Drain the whey by putting the cheese in a sieve or large piece of cheesecloth.

      Season with the salt and melted butter . You also can add other seasonings as you like. Place in refrigerator to chill and use within a day or two.

  • Some like to add pepper or paprika to this cheese.

  • Do not let the milk boil!
