Things You'll Need:
- 1 tsp Olive Oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 chicken breasts, cooked and chopped or shredded (or use packaged chicken pieces)
- 1 cup/can corn
- 1 Tbsp hot sauce(optional, but gives a great flavor and not too hot)(just make sure it isn't a too vinegary kind)
- 1 tsp ground cumin
- 1 tsp Worcestershire sauce
- 1 tsp chili powder
- 3 1/3 cups chicken broth
- 1 3/4 cups Mexican style diced tomatoes, undrained
- 1 can tomato soup
- Tortilla chips

Step 1
Heat oil in Dutch oven over medium-high heat.

Add onion and garlic and sauté for 2-3 minutes, or until onion is mostly clear.

Stir in chicken, corn, hot sauce, cumin, Worcestershire sauce, chili powder, chicken broth, tomatoes and tomato soup.
If desired you may add 1/4-1/2 cup white long grain rice, canned and drained black beans or other desired fillers to soup at this point to make thicker. But if you add the rice it does need to cook for at least 20-30 minutes to fully cook the rice! -
Step 4
Simmer for 45 minutes to one hour to meld the flavors. (If in a hurry, you can eat sooner, the flavors just won't be as prominent.)

Step 5
Break tortilla chips into crumbles on the bottom of a medium sized bowl. add soup, then top with some cheese if desired. You can also add Sour Cream, cilantro, or avocado!
