Instructions

Things You'll Need:

  • Grocery list
  • Mixing bowl
  1. Step 1

    Step One: Groceries needed

    2 tbl. sunflower oil
    1 pkg extra-firm tofu
    1 yellow or green zucchini
    1 red pepper
    1 tbl. minced fresh ginger
    1 c. unsweetened coconut milk
    1 lime (juice)
    1 tbs. Soy Sauce
    1/2 tsp. Thai red curry paste
    Fresh basil leaves

  2. Step 2

    Step 2: Preparation

    Heat sunflower oil in pan. Add tofu, cook on both sides approx. 5 minutes. While the tofu is cooking, chop up zucchini, red pepper, mince ginger.
    When tofu is done cooking, put aside. Add a bit of sunflower oil to the same pan & saute vegetables. Cook for about 5 minutes. Add the tofu, coconut milk.
    While the coconut milk & tofu are heating, in a small mixing bowl add, soy sauce, curry paste, and lime juice. Mix well and add to pan.
    Cook until the sauce thickens. Season with pepper and add cut leaves of basil to the serving dishes.

  3. Step 3

    You can cook some jasmine rice, or brown rice to serve with this. Also I sometimes have risotto.
