How to Clean and Prepare Pork Chitterling

One of my Favorite Southern families meals to prepare during the holiday seasons is Pork Chitterlings or Pig intestines. Chitterlings can be fried or boiled and seasoned with just the right ingredients to give you that taste you'll never forget!

Difficulty: Moderately Easy

    Cleaning the chitterlings is the hardest part, It a part that everyone can't do, because of the smell. To start you can purchase a 5lbs or 10lbs bucket of chitterlings you can also buy them already clean, they cost a little bit more, but you still have to wash and clean about the same as the unclean ones.

    Soak frozen Chitterlings over night, after they have thawed out clean each one by one, remember chitterlings is intestines so you would have to hand pick the fecal matters, and extra fat, and soak in cold water for about 15 minutes. Next place chitterlings in a half of pot of water, after they began to boil add your season, about 2tsps of sea salt, chop up 1 onion or garlic or both. It helps with the smell as well as the taste, you can also add Jalapeno, banana peppers or red peppers.

    Cook for about 3 hours or until they are tender. Serve with Baked beans, and coleslaw, or collard greens either one you prefer, cut up chitterlings and add hot sauce. You can serve during the holidays or any time of the year.
