Step 1
Use peanut oil because it has a high smoke point and nice flavor. Most people prefer peanut oil to deep fry turkey, but it is not the only way to fry.

Take a deep stock pot and place your turkey inside. Cover the turkey with water and then add a few more inches of water on top of the turkey. Then take the turkey out and measure how much water you used. This is how much oil you should buy.

Go to a wholesale food store, a restaurant supply store or a bulk food store and buy enough peanut oil based on your measurements. (Buy a little more to be safe). You will need a lot of oil!

Buy a turkey fryer to deep fry your turkey in. Read the turkey fryer instructions to find out what types of oil they suggest you use.

Use canola oil instead of peanut oil if you want a healthier deep fried turkey.

Use vegetable oil if you do not want to use peanut oil or canola oil.

Do not use peanut oil if someone you are cooking for is allergic to it.

Reuse the peanut oil up to 3 or 4 times. Strain out all the burnt and other pieces and store for reuse next time. Each time you fry with the same oil, the turkey tastes better and better.
