What is a Plantain?
The name plantains comes from the Spanish word Platanos,Plantains are a member of the banana family. They are sometimes referred to as the pasta and potatoes of the Caribbean and Latin America, both green and ripe plantains are widely used in the Caribbean and Latin American cooking. Plantains are highly nutritious they are good source of potassium, dietary fiber, vitamin A, and vitamin C. They are also high in carbohydrates and a great energy booster.
This vegetable can be prepare as an appetizer, main course , dessert and also to make certain beverages.
My favorite recipe is fried plantains with chorizo, with a Piscotinni cocktail .

Instructions

Things You'll Need:

  1. Step 1
    Green plantains

    Step 1
    Peel 3 unripe firm and green plantain, to peel plantains cut each end off. Using a sharp knife, make another slice trough the skin and peel skin back . Use your fingers to make it loose then remove plantain from the skin.

  2. Step 2

    Slice peeled plantain into one inch thick pieces. Heat the oil to 325 degrees F. carefully add plantains to oil and fry until golden yellow color about 2 minutes per side. Remove plantains then set them out on a paper towels to drain oil and cool slightly.
    Step 3
    Smash each fried plantain with a tool called tostorena or using the bottom of a large coffee cup press each piece of plantain down firmly.

    Step 4 and 5
    Soak plantains in a salty water with fresh lime juice for one minute, remove from water set them out on a paper towel pat them dry.
    Step 5
    Bring oil back up to 325 degrees F and return plantains to pan cook for 2 to 4 minutes per side until crisp. Remove them and set on a paper towel and sprinkle with a little bit salt, and a squirt of fresh lime juice if desired. Serve immediately. They are delicious with fried chorizo.

on 4/29/2009 I was first introduced to this recipe through a Haitian family about twenty years ago. I loved it so much that I started making it myself. It didn't come out all that good. Now, thanks to your article, I know where I went wrong. Nice work.
