Things You'll Need:
- Fresh produce and herbs
- Cocktail ingredients
- Self tanner and sunglasses
- Hummus
-
Step 1
Think classic dishes with fresh ingredients like asparagus risotto, pasta with artichokes and tomatoes, spring vegetable minestrone soup, toast with homemade basil pesto, baby lettuce salad and anything you can grill (even if you are using your indoor George Foreman, baby!).
-
Step 2
Google the name of the dish that peaks your interest for a ton of recipes. Markets like Whole Foods publish recipes based on what they have in the store (see Resources below).
-
Step 3
Start the celebration of spring with an herb-infused cocktail. Include ingredients like spearmint, basil, thyme, rosemary, tarragon, sage and cilantro. My favorite is rosemary-infused gin with Meyer lemon and tonic. Insert well-washed rosemary sprigs into a bottle of gin and chill overnight. Serve over ice with tonic garnished with a lemon wedge. Or make a classic martini garnished with a sprig of rosemary.
-
Step 4
Slice some fennel and cucumbers and serve with hummus along with the cocktails. It's a very tasty accompaniment that screams "light and springy."
-
Step 5
Invite your friends over to sample self-tanners and try on sunglasses. Then you can transport yourself even further by browsing through island vacation websites!
