There are three grades of vegetables. Grade A vegetables have the best color, size, shape and flavor. Grade B vegetables are only slightly less perfect than Grade A and Grade C vegetables are alright, but their color and texture are not of great importance. Grade C vegetables are usually used in recipes such as soups. Here are some tips on how to shop for fresh vegetables.

Instructions
  1. Step 1

    When buying asparagus, look for a rich green color, a tender stalk and closed, compact tips. Avoid asparagus that has open tips and is moldy.

  2. Step 2

    When you buy snap beans, look for a bright color. Avoid beans with a thick tough pod, a limp dry pod and blemishes.

  3. Step 3

    When buying broccoli, look for a uniform green color and tight flower clusters. Avoid broccoli that has a yellowish or brownish color and is wilted.

  4. Step 4

    When you buy cabbage, look for a heavy size, firm head and a bright color. Avoid cabbage that has blemishes and is wilted and decayed.

  5. Step 5

    If you buy carrots, look for carrots that are firm, have a bright orange color and smooth skin. Avoid carrots that are limp and discolored.

  6. Step 6

    When buying cauliflower, look for tight flower clusters and a white color. Avoid cauliflower that is discolored.

  7. Step 7

    If you buy celery, look for crisp firm stalks and is bright in color. Avoid celery that is limp and discolored.

  8. Step 8

    When buying fresh corn, look for plump kernels. Avoid corn that has small kernels and wilted husks.

  9. Step 9

    When buying cucumbers, look for cucumbers that are firm and have a bright green color. Avoid buy cucumbers that are limp or yellow.

  10. Step 10

    When you buy lettuce, look for lettuce that is heavy in size, has a bright color and crisp leaves. Avoid lettuce that is poor in color, wilted and has blemishes.

  11. Step 11

    If you buy onions, look for onions that are firm and smooth. Avoid onions that have blemishes or soft spots.

  12. Step 12

    When buying potatoes, look for potatoes that are smooth, firm and well, shaped. Avoid potatoes that have bruises, show signs of sprouting and are shriveling.

  13. Step 13

    When buying tomatoes, look for tomatoes that are bright red and are firm and smooth. Avoid tomatoes that have bruises, cracks and soft spots.

Tips & Warnings
  • Your senses are the best judge when buying produce. All fresh produce should feel firm, crisp and have a good color.
