A healthy low fat/low calorie dish -- Apple and Sweet Potato Casserole for you and your loved ones to enjoy. Weight watchers, vegan and vegetarian friendly recipe.

Instructions

Things You'll Need:

  • 2 pounds peeled cubed sweet potato (about 6-1/2 cups)
  • 4-1/2 cups peeled cubed butternut squash
  • 2-2/3 cup peeled red apples
  • 1/2 cup sugar
  • 1/3 cup evaporated skim milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 3/4 cup fat-free granola without raisins
  • 1/4 cup firmly packed brown sugar
  • Whipped cream
  1. Step 1

    Place squash and sweet potato in a large Dutch oven. Cover contents with water and bring to a boil.

  2. Step 2

    Reduce heat. Uncovered and simmer for 22 minutes or until tender. Drain (as much water out as possible) and then set aside.

  3. Step 3

    Mean while cook chopped apples in a skillet until heated through. Preheat oven to 375 degrees F.

    Puree following in a food processor: The cooked apple, butternut squash mixture, sugar, cinnamon, nutmeg, and evaporated skim milk, blend until smooth and silky.

  5. Step 5

    Spray or grease a large baking dish with cooking oil. Pour mixture into the the dish.

  6. Step 6

    Place brown sugar and granola in a resealable plastic bag. Crush the mixture with a rolling pin.

  7. Step 7

    Top the casserole with crushed granola mixture. Uncover and bake in a 375 degrees F oven for 25 minutes, or until topping is light brown.

  8. Step 8

    Remove from heat and cool about 5 minutes in room temperature. Spoon or squeeze prepared whipped cream while serving. Serve with cooked rice, use as a filling for sandwich/tortilla, or topping (condiment) for saltine cracker.

on 8/16/2009 To goldiec: That's how I do it. Boil them in water, and then immerse them in ice cold water to stop immediately the cooking process. The skin will be easily peeled off this way. I should include it in the article Steps...lOl.

However, I've seen people using a peeler to remove skin before cooking (time consuming). And there are others who just don't mind eating the skin all together, provided that it's scrubbed clean.
