Things You'll Need:
- (For the Filling)
- 2 pounds ground beef
- 1-1/2 cups chopped leeks
- 6 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 medium onion, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoons sugar
- 1/2 cup diced potatoes
- 1 teaspoon flour
- 2 tablespoons vegetable oil (for stir-frying)
- 4 cups vegetable oil (for deep-frying)
- (For the Pastry)
- 3 cups all-purpose flour
- 3 whole eggs
- 1/2 cup water
- 4 tablespoons sugar

Step 1
- - For the Pastry - -
In a mixing bowl, add 3 cups all-purpose flour, 3 whole eggs, 1/2 cup water and 4 tablespoons sugar. Blend well.
Transfer mixture on a floured board, knead well until the dough is soft. -
Step 2
Roll the dough out on the board to form a 1/8" thick sheet. Use round cookie cutter or cup to cut out circles (about 5" in diameter).

- - For the Filling - -
In a large skillet or wok, add minced garlic, onion, ground beef, soy sauce, sugar, salt and pepper over medium-high heat. Saute for 30 seconds. Add in the flour, stirring. Add diced potatoes and leek. Cook for another 30 seconds.
Transfer to a heat-proof dish or bowl. -
Step 4
Put two tablespoonfuls of the beef filling in center of each formed dough. Brush some water on the dough edges, then fold to a half-moon shape. Pinch to seal tight the opening.

Step 5
Ready - to - bake beef and leek pastry- - Cooking - -
In a wok or deep-sided skillet, pour 4 cups oil and deep-fry the turnovers over high heat, 2 minutes each.
Remove and drain on paper towels. -
Step 6
Ready - to - eat beef and leek turnoversPreheat oven to 400 degrees F. Place turnovers on ungreased baking sheet, and bake for 15 to 18 minutes, or until golden brown.
Variations: use 2 pounds ground pork to substitute beef, or for a more healthy choice, use 2 pounds turkey to exchange for beef. All other ingredients and cooking method are same.
