I remember going to grandma's and there would be a pantry full of different canned products. Canning is done to help preserve food for a longer amount of time.

For canning food you will need glass jars that can be boiled.

Instructions

Things You'll Need:

    During tomato harvest, pick as many tomatoes that you will like to can.

    Remove the green tomato stalks, and nick the skin of the tomatoes with a knife.

    Heat a kettle of water until boiling. Place tomatoes in a large bowl and pour the boiling water over them. Allow the tomatoes to soak in the water until the skins have loosened.

    With a sharp paring knife, peel off the skins from the tomatoes. While peeling, be careful that the tomatoes retain their shape and do not lose any juice.

    Make a brine by mixing half and ounce of salt to a quart of water.

    Pack tomatoes in jars very tightly.

    Fill the jars with brine and cover with the sealing disk, and screw the lids on loosely. Lower into warm water. Bring to a boil, lower the heat and simmer for 40 minutes.

    When cool, lift jars from the pot. You will noticed that the lids of the jars have tighten on it's own. Dry water from jars, and store.

on 10/17/2009 My mom taught me to use a canner, its takes alot less time. I would like to try this way also. I usually use her stove when we can. I have a flat service stove and the eyes goes up and down with the heat. Maybe I can do my canning this way with my stove. I will give it a try at least and see how it comes out. Thanks for sharing this with me. I probably could can anything on my stove like this. Great! 5*
