How to Make Ground Sausage Recipes
If you have a meat grinder, homemade ground sausage is more economical than purchasing sausage at the grocery store. You also have the added benefit of being able to experiment with spices to find the sausage recipe that you like best. Things You'll Need
- Pork shoulder roasts
- Sharp knife
- Meat grinder
- Large bowl
- Salt
- Sage
- Black pepper
- Red pepper flakes

Preparing the Meat

Purchase enough pork shoulder roasts to yield approximately 10 lbs. of meat.

Slice and remove the heavy layer of fat from the bottom of the roasts. Use a sharp knife to remove the bone from the roasts if they have one.

Cut the boneless meat into 1- to 2-inch cubes.

Set up your meat grinder and place a large bowl under the grinding shoot to catch the ground meat.

Feed the pork cubes through the grinder.

Add in 2 tbsp. salt, 4 tsp. ground or fresh, chopped sage, 4 tsp. black pepper and 1 tsp. red pepper flakes.

Mix the spices throughout the ground meat using your hands.

Run the meat through the grinder a second time, to blend the spices into the meat.

Shape the ground sausage into patties and place in freezer bags. Store in the refrigerator or freeze until needed.

Tips & Warnings
Pork shoulders have the proper ratio of fat to meat that makes good sausage. If you use another cut of pork, make sure to keep the ratio of 1/4 lb. of fat to 1 lb. of meat for the best results. You can make sausage with beef, turkey or venison also. Be sure to add a ratio of 1/4 lb. fat for every pound of meat used. Experiment with the spices until you find a blend that suits your tastes. Other spices to try are coriander, paprika, ginger, celery seed and nutmeg.
