How to Sharpen an Electric Carving Knife
Most electric knives with flat blades can be sharpened just as with any other flat knife; just make sure that the knife does not turn on in the middle of the sharpening process. If your electric carving knife has a serrated edge, however, you must sharpen each gap between serrated teeth as if it were a tiny, individual blade. Make sure that your electric carving knife is turned off and unplugged. If it is battery-powered, remove the batteries.

Starting at one edge of the knife, select one gap between serrated teeth to sharpen. Match the size of the sharpener to the size of the gap by sliding a graduated knife sharpener into the gap until they match in size, or by selecting a circular file that matches the size of the gap.

Hold the sharpening tool perpendicular to the gap you are sharpening, with the tip declined at the same angle as the bevel on that gap--20-degrees for most knives.

Make smooth, controlled back-and-forth strokes within the gap, perpendicular to the blade. Roll the round sharpening tool along the gap so that you sharpen the sides of it, not just the bottom, as you stroke.

Repeat the same process on the other side of the gap.

Continue matching your sharpening tool to the size of the gaps on the knife. Serrated knives might have gaps of different sizes, so you might need to switch files or work further up or down the graduated surface of the sharpening tool to get them all.

Rinse the blade of your electric knife under running water to remove any metal shavings. Wipe dry before storage or use.
