Traditionally a Malaysian and Singaporean dessert, ais kacang is made of red beans and shaved ice topped with sweet syrup or jelly beans. The word "ais" comes from the English word "ice," and "kacang" means 'bean' in Malay. Ais kacang is a popular street food in Southeast Asia, where it can be found in a variety of bright colors, and is often served with fruit cocktails. This recipe makes one serving.

Instructions

Things You'll Need:

  • 1 heaping tbsp. boiled red beans (they should be soft---canned red beans work fine)
  • 1 heaping tbsp. cooked sweet corn kernels (canned corn is OK, too)
  • 1 heaping tbsp. jellybeans
  • 1 heaping tbsp. chopped peanuts
  • 1 tsp. chopped, preserved nutmeg fruits
  • Large scoop of shaved ice
  • 1 tbsp. colored sugar syrup (fruit syrups like Torani work fine)
  • 2 tbsp. evaporated milk
  1. Step 1

    Mix the beans, corn, jelly beans, peanuts and nutmeg in a small serving bowl.

  2. Step 2

    Add a scoop of shaved ice over the mixture.

  3. Step 3

    Pour the fruit syrup over the top of the ice. You can use more than one kind of fruit syrup.

  4. Step 4

    Pour the evaporated milk over the ice.

  5. Step 5

    Serve immediately before the ice melts.

Tips & Warnings
  • You can make shaved ice by grinding ice in a blender or food processor. There is no fixed recipe for ais kacang---the variations are infinite.
