How to Control Temperature on Big Green Egg Cooker

As an owner of a Big Green Egg Cooker, it took me a few times using it to learn to control the temperature. Here are my tips on how I learned. Good luck and comment with any questions. I have owned one now for several years and can cook just about anything on it. Good cooking!!

Instructions
  1. Step 1

    Big Green Eggs are the best thing that I have ever cooked on. They do a phenomenal job cooking just about anything. Controlling the temperature can be tricky if your just using it or just bought one.

  2. Step 2

    The temperature for the Big Green Egg Cooker is controlled 2 ways. The draft door on the bottom and the daisy wheel top on the top. The more open they are, the more air flow can get through. Since fire requires oxygen, the more open the door and top are, the hotter the temperature will be.

  3. Step 3

    After the coals are going well, determine the temperature you want your Big Green Egg to be based on what you are cooking and adjust from there. To maintain about 300-400 degrees the bottom draft door and the top daisy wheel need to be open about 1/4 off the way. If both are wide open, you can count on over 500 degrees of heat.

  4. Step 4

    With the bottom draft door open only about 1/8 of an inch, and the top daisy wheel open only about the same, the temperature of the Big Green Egg will stay at about 275-300 degrees for many hours. This is perfect for long term smoking.

Tips & Warnings
  • It takes some time and practice to get it right. Use different items and try different recipes. Make it a fun experience.
