How to make Springtime Penne ( recipe )

I am always on the look-out for simple, healthy recipes that please the whole family. This one pleases most which is really as good as it gets(a couple of the children balk at the asparagus, but they can pick around it)! It is an easy recipe, and a great way to use leftover ham.

Instructions

Things You'll Need:

  • 3 c uncooked penne
  • 1 large onion, chopped
  • 1/4 c butter
  • 1/2 c heavy cream or whole milk
  • 1/8 tsp salt
  • 1 lb fresh asparagus, trimmed and cut into 1 inch pieces
  • 1/2 lb cubed, cooked ham
  • 1/4 tsp pepper
  • 1 c sour cream
  • 1 tsp lemon zest
  1. Step 1

    Place about 2 quarts of water in a large pot. Add one tsp of salt. Bring to a boil, and add the penne pasta. Let boil in accordance to package instructions, usually about 7-8 minutes, until firm to the bite, or it sticks to the wall when thrown.

  2. Step 2

    Saute asparagus and onion in butter until the asparagus is crisp-tender.

  3. Step 3

    Add ham, cream, pepper and salt. Bring to a boil, then reduce heat. Cook for one minute.

  4. Step 4

    Drain the pasta, and add it to the mixture.

  5. Step 5

    Stir in sour cream and lemon zest until the mixture is evenly coated. Cook until just heated through. Serve immediately.

Tips & Warnings
  • Smoked sausage cut into chunks can be substituted for the ham.
