Add this peanut sauce to any Thai dish for a spicy kick.

This sweet, spicy, salty Asian dipping sauce goes great with grilled chicken, sate, cold soba noodles, stir fry and many other Asian dishes. If you use natural peanut butter that has been refrigerated, soften it by microwaving for several seconds before using it for the peanut sauce. Does this Spark an idea?

Things You'll Need

  • 1/4 cup sugar-free peanut butter, creamy or chunky
  • 2 tbsp. soy sauce
  • 1 tbsp. rice wine vinegar
  • 2 tsp. sesame oil
  • 1 to 2 tbsp. Asian hot chili sauce or paste
  • Chopped green onion, white parts only
  • Dried garlic
  • Fresh cilantro
  • Lime wedge

Instructions

      In a serving bowl, combine the peanut butter, soy sauce, rice vinegar, sesame oil and chili sauce or paste.

      Whisk the ingredients thoroughly. If the peanut sauce is too thick, add a few tablespoons of water or additional sesame oil until you reach the desired thickness and consistency.

      Add a handful of chopped fresh cilantro and sliced green onions, a sprinkle of dried garlic and a squeeze of lime juice. Stir to combine. Allow the peanut sauce to stand for at least one hour before serving.

Tips & Warnings

  • Use more or less hot chili sauce, depending on how spicy you want the sauce to be. For extra spice, add dried red chili flakes to the sauce.

  • If you prefer a sweeter peanut sauce, reduce the soy sauce or add several teaspoons of sugar.

  • The ingredients can be blended in a food processor rather than whisked by hand, if desired.

  • A few teaspoons of fresh grated ginger also go well with this sauce.
