Things You'll Need:
- 4 (8-ounce) lobster tails, fresh or frozen
- 1/2 cup minced celery
- 1/2 cup minced onion
- 1/2 cup minced green bell pepper
- 1/4 cup minced parsley
- 6 tablespoons butter or margarine
- 2 hard boiled Large eggs, finely chopped
- 2 raw eggs
- 6 drops Tabasco sauce
- 2 cups bread crumbs, with 1 to 2 cups additional
- 1 tablespoon salt
- 1 teaspoon cayenne pepper
- 10 whole cloves
- 1 lemon, quartered
- 1-1/2 cup shredded Parmesan cheese
- 1 small onion, halved
- 1/2 low-fat milk
- 1 teaspoon peppercorns
- Salt and pepper, to taste

Step 1
In a large pot of boiling water, add 1 tablespoon salt, 1 teaspoon cayenne pepper, 10 whole cloves, 4 wedges of lemon (with skin), minced onion, and 1 teaspoon peppercorns.

Cook the lobster tails in the boiling water for 20-25 minutes with the ingredients in Step 1.
Remove the lobster tails and split them in half lengthwise. Pick the meat. reserve the halved lobster shells; you should have 8 of these.
Discard contents in the pot used to boil the lobster. -
Step 3
Preheat oven to 375 F degrees.
Meanwhile, melt butter in a hot skillet over medium-high heat. Saute the parsley, onions, celery, and green bell pepper. Cook until onions are brown and transparent. -
Step 4
Whisk 2 raw eggs until formed into liquid in a small bowl.
In a large bowl, break lobster meat into chunks.
Stir and mix well 1 cup bread crumbs, hard boiled eggs, cooked vegetables, raw eggs, shredded Parmesan cheese, Tabasco sauce, salt and pepper (to taste). Gradually add low-fat milk to the mixture to hold the ingredients together. -
Step 5
Stuff the mixture full in each of the 8 saved lobster shells. Top with reserved bread crumbs.
Place stuffed lobster tails in a greased baking pan. Bake until cheese and vegetables are slightly brown, about 18 minutes. Serve hot with mayonnaise or melted butter.
For 4 people as a main dish, or 8 persons for the side.
