Capellini pomodoro is simply capellini, or angel hair pasta, covered in a simple tomato sauce. While jarred sauces are an easy choice, a fresh sauce takes only a few minutes. Use canned tomatoes if fresh tomatoes aren't easily available. Add some simple herbs and spices that you have on hand to make an easy and delicious sauce to toss over freshly cooked pasta. Things You'll Need

  • 1 pound capellini
  • 1 12-ounce can diced tomatoes, 1 one pound diced fresh roma tomatoes
  • Fresh basil
  • 2 cloves garlic
  • Olive oil
  • Salt
  • Large pot
  • Water
  • Saute pan
  • Colander

Instructions

      Bring a large pot of salted water to a boil. Add the pasta. Cook approximately 8 minutes, or to desired firmness. Drain in a colander.

      Add a few tablespoons of olive oil to a deep skillet set over medium heat.

      Finely mince the garlic. Dice the tomatoes and reserve the juices. Alternately, open the canned tomatoes and reserve the juices.

      Add the garlic to the skillet, being careful not to burn the garlic. When the garlic is aromatic, it's cooked fully.

      Add the tomatoes to the skillet and turn the heat to low. Add the salt and fresh ground pepper. Cook on low for about 2 minutes, or until the tomatoes are heated through.

      Add the drained pasta to the tomato mixture. Mix well. Add 1/2 cup freshly torn basil leaves to sauce-covered pasta and mix again. Serve with parmesan cheese and additional ground pepper.

Tips & Warnings

  • If tomatoes are too acidic for you, add a pinch of baking soda.

  • Add basil right before serving. Fresh herbs are best raw
