These Sugarless Oatmeal Cookies are a perfect diabetic recipe for people who can control their diabetes by following a healthy diet. This recipe makes about two and a half servings of delicious healthy oatmeal cookies, which equals about 10 cookies.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 bananas, mashed
  • 2 cups oatmeal, uncooked
  • 1/2 cup raisins
  • 1/3 cup low-calorie margarine
  • 1/4 cup skim milk
  • 1 teaspoon vanilla extract
  1. Step 1

To begin preparation preheat your oven to 350 degrees. (Temperatures can vary a little from oven to oven, but 350 degrees should be safe for this recipe.)

  2. Step 2

Get a large cookie sheet ready, but don't grease it.

  3. Step 3

Combine all the ingredients in a large mixing bowl and beat well.

  4. Step 4

Let the cookie dough stand about 5 minutes so the oats have time to absorb moisture from the mashed bananas.

  5. Step 5

Drop a heaping teaspoonful for each cookie onto your ungreased cookie sheet.

  6. Step 6

Bake cookies for 15 to 20 minutes - check often if you are unsure of your oven's temperature.

  7. Step 7

Let stand 1 minute on cookie sheet then transfer the cookies to wire racks to cool completely before snacking.
