Things You'll Need:
- Stove
- Pan
- Olive Oil
- Butter, Organic w/o salt
- 2 T. Cornmeal
- 4 T. Flax Seed
- 2 C. Whole Wheat Flour or 1C. Rice Flour and 1 C. Whole Wheat Flour
- 2 T. or Pkg. Stevia
- 1/2 t. Baking Powder
- 1 1/2 t. Baking Soda
- 2 Eggs or Egg Whites Organic
- 1 C. Rice Dream
- 1 C. Defrosted Frozen Mixed Berries Chopped
- Maple Syrup

Step 1
Stevia has many uses1. In one bowl mix together Flour, Stevia, Flax Seed, Baking Soda, Baking Powder, and cornmeal. In another bowl mix together the eggs, rice dream and 2 T. melted butter (can omit the butter and use 2 T. olive oil).

Stevia Plant2. What is stevia and why should I put that in my pancake mix? Stevia is a herb from South America and is 20 times sweeter than sugar. Stevia is Anti-fungal, anti-yeast and feeds your pancreas. (Wonderful for everyone and really good for Diabetics).

3. Mix the dry and wet ingredients together and fold in the fruit. Can put bananas inside or fresh blueberries if they are available.

4. Pour 1-2 T. of olive oil in your pan at Medium heat and pour in your pancake to the size you prefer. Cook for 2-3 minutes on each side. Top with some more fruit and your Maple Syrup if you so desire.
