Things You'll Need:
- 6 large red or yellow onions, peeled and thinly sliced.
- Olive oil
- 1/4 tsp of sugar
- 2 cloves garlic, minced
- 8 cups of either beef stock or chicken stock. (you can mix the two if you'd like)
- 1/4 tsp of dry thyme
- 1/2 cup of dry vermouth or dry white wine
- 1 bay leaf
- Salt and pepper
- 8 slices of toasted French bread
- 1 1/2 cups of grated Swiss Gruyere with a little grated Parmesan cheese

Step 1
Put the stove on medium. In a large saucepan, saute your onions with the olive oil. Do not burn them, but cook them enough so they are brown. (This will take about 30-40 minutes) Make sure to add sugar in the pan after about 10 minutes in order to help the carmelization.

Add garlic and saute for another 10 minutes. Then add the stock, vermouth or wine, thyme, and bay leaf. Wait for about 30 minutes while the ingredients simmer and the flavors are blended well. Make sure to discard the bay leaf. Also, add some salt and pepper, if desired.

Step 3
Its best to serve the soup in oven proof bowls, but a casserole dish would be equivalent. At this point, you would also want to sprinkle on the shredded cheese and add the toast. Set your broiler to 350 degrees Fahrenheit and put in the soup for 10 minutes, or until the cheese bubbles and becomes slightly brown.
