How to Make Easy Taco Soup

Taco Soup is a great way to throw together a delicious dish when you are short on time or ingredients. In this article, I list specific ingredients but feel free to mix the recipe up to match your taste. This soup is also a great way to use up leftover rice, hamburgers, and veggies.

Instructions

Things You'll Need:

  • 2 cans of diced tomatoes with green chilies
  • 1 can of regular diced tomatoes
  • corn
  • instant rice or leftover rice
  • 1 large can of pinto beans
  • 1/2 package of frozen pepper blend
  • 1 lb of ground beef or leftover hamburgers
  • beef boullion or beef stock
  • 2-3 cups of water
  • chili powder to taste
  • taco seasoning to taste
  1. Step 1

    Brown the ground beef in a skillet. If using leftover hamburgers, crumble the meat into bite size pieces. If using the skillet for the soup drain the grease.

  2. Step 2

    In a soup pot or skillet, dump in the canned tomatoes, corn, and pepper blend. Stir well.

  3. Step 3

    Add water and 2-3 tsp. of bouillon (add more or less for taste. Bring to a boil. Reduce heat and simmer for a few minutes.

  4. Step 4

    Drain can of beans. Rinse the beans and add to the soup.

  5. Step 5

    Simmer soup for as long as you desire. In the last 15 minutes add rice to the pot. Enjoy!
