Gets Fruits & Vegetables Ready to Can

Concerned about your food supply? Worried about the economy? Think canning would help your family? Here what you need to know about how to prepare fruits and vegetables for canning.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Fruits or Vegetables
  • Canning Jars
  • Canning Equipment
  • Water
  1. Step 1

Preserving begins with the fruits and veggies themselves. If you use poor quality, older, mushy fruits & veggies, when you later eat what you've canned, it's not going to be good... :( Choose only fresh, ripe, firm, tender fruits and veggies in their prime.

  2. Step 2

Gently wash all fruits and veggies. Do NOT soak them in water as you will loose water-soluble vitamins! Quickly, wash small bunches under running water. An easy way to do this is by putting the food in a strainer and putting the strainer directly in the sink with the faucet running over it.

  3. Step 3

When the washing is done, do any necessary cutting, coring or peeling as required or desired.

  4. Step 4

Sort by size and put into jars. You do not want big chunks with little chunks to ensure even cooking while the jars are being processed.

  5. Step 5

Follow your recipe for processing. Enjoy! :)
