Instant oatmeal is a convenient way to eat a hot breakfast without making a big meal. There's more you can do with packets of instant oats than just make a bowl of oatmeal--such as make cookies. Making cookies with instant oatmeal isn't any harder than using regular oats. Plus, using the flavored packs of instant oatmeal can make more interesting and tasty cookies. For a quick and simple snack, use instant oatmeal and make a batch of cookies.

Things You'll Need:

  • Whisk
  • Small saucepan
  • Bowl
  • Parchment paper
  • Cooking spray
  • Cookie sheet
  • 1 cup all-purpose flour
  • ¼ tsp. baking powder
  • ½ tsp. baking soda
  • 6 packs of instant oatmeal
  • ½ cup butter
  • 1 egg
  • ½ cup white granulated sugar
  • ½ cup brown sugar
  • ½ tsp. vanilla extract
  • 1 tbsp. milk
  • ½ cup raisins
  • ½ cup dried cranberries

    How to Make Oatmeal Cookies With Instant Oatmeal

  1. Step 1

    Preheat the oven at 350 degrees F. Lay a piece of parchment paper on the cookie sheet and spray it with cooking spray. The parchment paper will help to keep the cookies from sticking to the pan. Set aside for later use.

  2. Step 2

    Combine the all-purpose flour, baking soda, baking powder and the instant oatmeal in a bowl. The instant oatmeal can be any flavor you want, or a mixture of flavors. You can also use unflavored instant oatmeal.

  3. Step 3

    Melt the butter in a small saucepan over medium-high heat. Don't overheat the butter, or it may turn a brownish color. Pour the melted butter into a bowl and crack an egg in to it. Whisk the melted butter and egg together.

  4. Step 4

    Add the white granulated sugar, brown sugar, vanilla extract and milk to the melted butter and mix together with a spoon. Next, add the raisins and cranberries to the mixture. You can also add some chopped nuts, such as walnuts, pecans or almonds.

  5. Step 5

    Take the bowl with the flour and instant oats and slowly add to the sugar mixture. The oatmeal cookie dough may be a little sticky. You can add a little more oats or flour to the cookie dough to thicken it up.

  6. Step 6

    Drop spoonfuls of cookie dough 2 inches apart on the prepared cookie sheet. You can also roll the cookie dough into balls. Use a cup or fork to flatten the dough balls until they are ½ inch thick.

  7. Step 7

    Bake the instant oatmeal cookies for about 10 minutes or until they are light golden brown. Take off the pan and let cool for about 5 minutes before eating.

Tips & Warnings
  • You can add any kind of dried fruit you want to the cookie dough, or leave fruit out altogether.

on 12/22/2009 I bought some Wal-Mart brand Apples & Cinnamon instant oatmeal packets and didn't care for the oatmeal, so rather than throwing the rest of the packets away, I tried this recipe today. The cookies are delicious! The Apples & Cinnamon flavor gave the cookies an amazing taste boost. Highly recommended!
